Owner Tyler Kopkas & Chef Dustin Ricker

• Dustin has spent 35 years working in Food & Beverage

• Originally from Maine, he specializes in Coastal Fine Dining

• Has held several positions at 5-star multi-regional resorts

• Father of six beautiful children

• Master pit smoker, he loves BBQ & Lowcountry Cusine


Matt Hankey

• Born and raised in the mountains of Virginia and classically trained as a Chef at Johnson & Wales in Charleston

• Over 20 years experience ranging from small family establishments to mega restaurants and an ultra high-end four-diamond Savannah restaurant

• Catering is now his thing, both on and off site for special occasions, corporate functions, and fast paced film shoots

• Focuses on dishes influenced by favorite bites from around the world, which has translated into comfort food for local patrons

• Through involvement with Well FED Savannah, Friends of the Farmers' Market, Grow.Eat.Repeat and gardening programs for local schools, Lauren continues to assist in cultivating health and community-conscious epicureans of all ages 


• Ventured out from humble beginnings in the Midwest

• Enjoyed a stint tasting and cooking across the country traveling by Ural motorcycle before landing home in Savannah

 Alfredo Soto

• Started cooking at the age of 15 in a professional kitchen in order to help his mother pursue her dream of becoming a nurse 

Attended Savannah Technical College for Culinary Arts to refine his craft 

• Cooked for private clubs such as The Landings and Ford Plantation before he found a home at 45bistro

Supports local businesses to supply the freshest seafood, meats and produce.

Many wonderful chefs have come before him and he considers it an honor to represent 45bistro as the Executive Chef

William Olgesby

• Began his career in the culinary arts as most chefs do, on the line of a chain restaurant as low man on the totem pole

• Has spent the majority of his 18-year culinary career working with The Gaslight Group at 
b. Matthew's location

• Currently the Director of Culinary Operations, overseeing daily operations, staffing and menus at the group's three restaurants and their food truck, The 5 Spot Mobile

The Gaslight Group's family of restaurants draw on Will's talent and love of French and Italian cuisine

Paul Ganem

Born and raised in Savannah  
Grew up in the family restaurant, Johnnie Ganem Steak Ranch working as Grillman, Chef, Meat Cutter and Manager, 1960 - 1981

Established “Parties by Paul,” a full service Food & Beverage Catering Company, 1981 - 2012

Executive VP & CEO of Johnnie Ganem Wine and Package Store, since 1990


Sam Brod &
Johan Hamstra


• Originally from Lancaster, Pennsylvania and a graduate of the Culinary Institute of America 

• Worked at several top establishments around the country including the Broadmoor Hotel  

• Executive Chef at The Landings since 2016, where his extensive experience in both special events and à la carte has resulted in exceptional growth of the Club

• Has a deep passion for sustainability and supports local agriculture

Married to wife Kristi, and has two beautiful daughters, Sydney Grace and Oliva Thompson


• Executive pastry chef at The Landings Club
• Born and raised in Rotterdam, The Netherlands
• Finished culinary school in his hometown, worked at several restaurants as a line cook but found his true passion lies in pastry. By taking classes from great pastry chefs in the country he explores all areas of the pastry field and with help from the Landings Scholarship Committee, he has finished his sugar craft course for cake decorating.

• He is proud to be father of two beautiful daughters and loves traveling.

Simone Concas

• A native of Sardinia, Italy, the heart of the Mediterranean

• Graduate of the Italian Culinary Institute

• Has worked at many high profile restaurants and Country Clubs, such as Il Pasticcio, Haig Point Country Club, The Wilmington Island Club, The Landings Club and most recently Belfair Country Club in Bluffton.

• European trained with a flair for French and Italian cuisine

Brett Cavanna

• Seven years with Café Boulud for Daniel Boulud in NYC and Florida 

• Sous Chef at FIG in Charleston, SC

• Chef and Partner at Louie's and Carriage House in New Hampshire

Nick Mueller

• Nick and his wife Tracy operate Mahgniffe Catering, Mulberry Hall Event Venue, The Laughing Boar Restaurant and The Sugar House, a unique Bed & Breakfast in Southeast Effingham

• Specializing in creative and eclectic mix of regional and ethnic recipes and food traditions - tying regional and seasonal produce, seafood, and meats with artisan products sourced from around the world  

John Angelo Cole

Graduated from Johnson & Wales culinary school in Providence, Rhode Island

More than 25 years of experience working in hotels and restaurants

Previously the Executive Chef for the Bohemian Hotel – Kessler Collection

Vincent Burns

• Developed a childhood passion for cooking at his grandmother's side.

• Graduate of South Carolina State with a degree in Engineering 

• Appointed Chef of Garibaldi in 1997 before becoming Chef of the Olde Pink House in 1999

• Has brought national attention to the Olde Pink House including a Di Rona Award and a Food Network appearance

A five-course dinner with craft cocktails and wine pairings for twenty people. Enjoy the first course outside with cocktails and sparkling wine then move inside for four more courses.

May we suggest hosting a fabulous Holiday Soiree, since the holidays are just around the corner.

Eight to ten seasonal passed and stationary hors d'oeuvres accompanied by wine and spirits by Paul Ganem of Johnnie Ganem's Wine & Package Shop.  Menu based on season and client suggestions.

Private Tasting Dinner for 12

An intimate dinner for a party of 12 in one of our elegant private dining rooms will be arranged with 45bistro.

We will serve a 6-course tasting menu of some of our house favorites with a few special items added.  Wines will be included to enhance the dining experience.

The Gaslight Group's newest location, 5 Spot Sandfly,  presents a custom, 4-course meal for 20 people in their brand new, private dining room.

Your custom menu will include the following courses:  salad, appetizer, entree and dessert.  Wine will be included.  Beer and liquor can be added for a fee. 

Taxes and gratuity not included.  Date restrictions may apply.

Paul Ganem will partner with two teams of chefs. Chef Nick of Mahgniffe LLC and Chef Matt Hankey, Current Catering.

Liquid spirits will be handpicked for each event to compliment the menu.

Join us in a relaxed historic setting for fine food from our on-site scratch kitchen, craft cocktails featuring house-made spirits, and a tap list full of New Realm’s Georgia-born craft beers. This package includes an exclusive five-star experience for 20 guests. Cocktail hour will be hosted in a private setting on our 2nd floor in the Ellis bar with craft cocktails & chef-crafted hors d’oeuvres. From there, you will move up to the 3rd floor where your group will have the entire floor (AND rooftop views of Downtown Savannah) to yourselves.

Your main course will be served with a four–course custom dinner & beer pairing facilitated by our Brewmaster. After-hour libations served in the Velvet Lounge & Beer Terrace.
